Frente a la idea de que el vino natural es una moda importada, esta obra demuestra que los argumentos vitalistas y puristas ya circulaban en España hace más de un siglo. Desde la Ley de 1895 hasta el reglamento europeo de 2021, la historia del vino es también la historia de sus definiciones legales, económicas y culturales. Un ensayo imprescindible para entender por qué, además de una bebida milenaria, el vino es un campo de batalla donde se cruzan innovación y tradición, intereses industriales y comerciales, preocupaciones por salud pública y expectativas culturales.
