De acuerdo con la FAO, la seguridad alimentaria se logra si todas las personas tienen acceso físico, social y económico permanente a alimentos seguros, nutritivos y en cantidad suficiente para cubrir sus requerimientos nutricionales y preferencias alimentarias, para lograr una vida activa y saludable. Para alcanzar la seguridad alimentaria, la autosuficiencia de proteína animal es fundamental; América Latina es el segundo lugar mundial en producción de carne, leche y huevo (más de 144 millones de toneladas al año); Argentina, Brasil, Colombia, Ecuador, Costa Rica y México aportan 81.6% (118 millones de toneladas) de la proteína animal (FAO). En el año 2050, con una población humana de nueve mill millones, la producción anual de carne deberá ser de 470 millones de toneladas; México aporta mas de seis millones de toneladas de carne de bovino, porcino y ave, pero no es autosuficiente. La red temática de investigación en ciencia y tecnología de la carne de especies pecuarias promueve los beneficios de la proteína animal, impulsa su producción y fomenta su consumo para reducir el hambre y la desnutración, cuidando los recursos naturales a través de una producción sustentable.
