Sinopsis
Los tubérculos y raíces andinas, grandes tesoros ancestrales de nuestra amplia biodiversidad vegetal, merecen una especial atención, en momentos en que la sociedad está en la búsqueda de alimentos de alta calidad, con valor nutritivo y limpios de agentes contaminantes químicos y orgánicos. Producidos sosteniblemente en ecosistemas de alta montaña, se convierten en una alternativa alimenticia que, por su rica composición, pueden escalar hacia el valor agregado de la agroindustria para aportar al desarrollo rural de las comunidades Rurales vinculadas a la agricultura familiar.
El cubio, más conocido en la región andina como mashua o mashwa, tiene singulares características nutricionales que ameritan el estudio de su comportamiento y transformación. Es así como en la Universidad de La Salle se realizó una exploración sobre esta especie, en campo y en agroindustria, y se encontraron interesantes resultados que empiezan a abrir nuevos caminos para la tan necesitada reconversión agrícola de la región Andina.
