Hongos silvestres comestibles: un recurso forestal no maderable del Nevado de Toluca
Sinopsis
Los hongos silvestres comestibles poseen un valor ambiental incalculable no solo porque constituyen un componente vital en la estructura de los ecosistemas, sino por su importancia en la economía y cultura de las comunidades rurales, pues por su valor alimenticio, su ingesta ha pasado a formar parte de la tradición gastronómica en muchas regiones del mundo.
El Nevado de Toluca es una de las áreas naturales más emblemáticas del Estado de México y en sus extensos bosques de coníferas se desarrollan diversas especies de hongos comestibles. Por ello, se llevó a cabo un estudio a cargo de investigadores y estudiantes de la Universidad Autónoma del Estado de México (UAEM). Los resultados de dichas investigaciones permitieron identificar 77 especies de hongos silvestres comestibles.
De este modo, con el uso de técnicas de marcadores moleculares se identificaron nuevos registros de especies para México y para el Estado de México. Por tanto, esta obra contribuye al conocimiento de los hongos silvestres comestibles del Nevado de Toluca con miras a evitar el daño a su ecosistema, así como su extinción.
