En México, las cadenas de valor de la carnes de bovino, cerdo y pollo, en el mercado interno, han mostrado avances significativos en su consumo y competitividad, con uso cada vez mayor de los conocimientos y tecnología desarrollados, pero, a nivel del mercado internacional, los avances son menores. Entre otros, hay limitantes asociadas con la eficiencia en
cuanto a producción, calidad, inocuidad y bienestar de los animales; asimismo, respecto a la carne de otras especies pecuarias como son los ovinos, caprinos y conejos, aunque el producto tiene un precio alto en el mercado, no tienen aumentos importantes en su producción y consumo per cápita. desde el sector productivo primario, así como en los siguientes eslabones de la cadena, transformación y comercio, con el uso adecuado de tecnologías que permitan mejorar su producción, calidad, inocuidad y competitividad al interior y fuera del país.
